The month of February will be the happiest and most festive of the year, a time when the natural order of things is overturned: Carnival is here!
Other than masks, confetti, streamers and toy trumpets, the feast of Carnival is marked by its sweets and, once again, they show how in Italian cooking many different versions co-exist; from city to city, in fact, many classic sweets can be found that have a different taste but especially different names. What in Perugia are called frappe in Florence become cenci, in Lombardia chiacchiere, in Liguria bugie, in Veneto galani.
As well as frappe, other Carnival sweets in Umbria are strufoli and brighelle.
